I had ripe dates kneaded with golden crumbs in melted butter, and we mixed in broken almonds and a hint of rosewater. We rolled them into balls and wrapped them in cloth. At halts, between two stages toward Damascus, a single one sufficed to sustain the body all day. Wisdom too travels thus: little matter, much strength.

Why this dish? Al-Fârâbî led a traveler's life, from Farab in Central Asia to Baghdad, Damascus, and Aleppo, crossing the Abbasid world in pursuit of study and patrons. Ḥays, a dense, preservable food, was precisely the nourishment of travelers and caravans plying these routes.

- Pitted Medjool dates — 300 g (base)
- Breadcrumbs or stale breadcrumbs — 100 g (binder)
- Clarified butter (ghee) — 3 tbsp (fat)
- Blanched almonds — 60 g (garnish)
- Rose water — 1 tsp (aroma)
- Cinnamon (optional) — 1 pinch (spice)
Method
- Toast the breadcrumbs in clarified butter over low heat until hazelnut-colored; let cool slightly.
- Roughly chop the almonds and dry-toast them.
- Mash the dates into a paste (in a mortar or food processor).
- Knead the date paste with the toasted breadcrumbs, almonds, rose water, and cinnamon.
- Form into walnut-sized balls and let them firm up; they keep for several days.
How it was made : Ḥays is an ancient food, known from the time of the Prophet, made from dates, dry cheese or breadcrumbs, and butter. Energy-rich and stable, it accompanied travelers and armies. Refined Abbasid versions added almonds, pistachios, sugar, and rose water, making it also a table treat.
The contemporary twist : Roll the balls in crushed pistachios and present them as bite-sized historical energy balls for hiking or snacking.
