The Algerian Mida — the rhythm of the family table
In the Algerian home of Assia Djebar's childhood, the meal is not divided into starter-main-dessert but organized around a central dish of semolina or wheat, placed at the center, shared by hand or spoon. Around it gravitate a soup to open, honey pastries for celebrations and visits, and mint tea that punctuates and extends the hours. The table is a place of women: they roll the semolina, measure the spices, and orally transmit the gestures — a heritage that Djebar spent her life collecting.
Signature : Smen (fermented clarified butter) and durum wheat semolina
Hand-rolled semolina is the soul of Algerian cuisine; smen — salted butter long-fermented in a jar — deposits an almost animal depth, a taste of cellar and terroir that distinguishes grandmothers' cooking from any modern imitation. A spoonful of smen turns a couscous into memory.
