Sharing Bush Tucker
Among the Aboriginal peoples of Queensland, there is no starter, main course, and dessert: you share what the Earth (the "Country") has given. The women bring back gathered seeds, fruits, and roots, the men bring back fish or game, and everything cooks together on the coals or in an earth oven, to be shared in a circle, without any hierarchy of dishes. Cathy Freeman grew up with this tropical heritage, between the river, the mangrove, and the family table, before layering on the nutritional discipline of an Olympic athlete.
Signature : Lemon Myrtle (Backhousia citriodora)
A small leaf from a rainforest shrub in Queensland, more lemony than lemon itself thanks to its record citral content. You crush it to flavor fish, breads, and teas: it is the aromatic signature of Cathy Freeman's country, where she took her first steps before the Olympic tracks.
