Javanese court meal (kraton)
The Javanese court meal (kraton) revolves around nasi (rice) as a sacred center, surrounded by lauk (accompaniments of fish, poultry, or meat), sayur (vegetables in broth or stir-fried), sambal (spicy condiments), and jajan (sweets). There is no starter-main-dessert sequence: all dishes are presented together on a tray or banana leaf, with everyone free to compose their own plate. Grand ceremonies add the tumpeng, a ritual rice cone offered before sharing.

The Majapahit empire controlled the maritime spice routes between the Moluccas, Java, and the Strait of Malacca. Nutmeg, clove, long pepper, galangal, and turmeric were both currency, markers of prestige, and the foundation of Javanese court cuisine — making the Palapa Oath (renunciation of spices) all the more radical.
