Why this dish? "In detention, food is scarce and frugal." Lentil soup, a humble and nourishing dish of the medinas, evokes survival and comfort cooking: few ingredients, much warmth. For a prisoner of Kenitra, a hot bowl of legumes was as much a care as a meal.

When you have little, you learn that lentils are a wealth: they stick to your belly and cost almost nothing. A little crushed garlic, cumin, a drizzle of olive oil, and there you have a bowl that warms the body and, I swear, the spirit too. Behind the walls, I understood that a hot shared meal could be a form of dignity — and that poetry, sometimes, is first of all that: not having a cold heart.

- Garlic — 3 cloves (flavor)
- Cumin — 1 tsp (spices)
- Sweet paprika — 1 tsp (spices)
- Olive oil — 2 tbsp (binder)
- Fresh coriander — a few sprigs (herb)
Method
- Rinse the lentils; sauté the crushed garlic in olive oil with cumin and paprika.
- Add the lentils and cover generously with water; salt.
- Simmer for 30 to 40 minutes until lentils are tender and soup is thick, adding water if needed.
- Adjust seasoning, sprinkle with coriander, and serve piping hot with bread.
How it was made : Legumes — lentils, chickpeas, fava beans — formed the protein base of modest meals in Morocco, meat remaining an occasional luxury. Cooked in an earthenware pot over the canoun (brazier), they fed families for pennies and constituted the everyday cuisine of the common people of the medinas.
The contemporary twist : A squeeze of lemon juice and a twist of the pepper mill just before serving, to awaken the soup's rusticity without betraying it.
