flipWarm Milk with Honey and Hyssop
Warm Milk with Honey and Hyssop
Why this dish? Stricken with boils, sitting on ashes and scraping himself with a potsherd (Job 2:8), Job is the figure of the suffering body. This sweet drink — milk, honey, and hyssop, the purifying herb of biblical texts — evokes the comfort offered to the sick to soothe the evening.
Warmed milk sweetened with honey and scented with a sprig of hyssop, a soothing evening drink. Without claiming to heal, it warms and consoles — the gesture one makes for a loved one in distress.
When night fell upon my wounds and my body was nothing but pain on the ashes, a warm cup was worth more than a long speech. We gently heated the milk, melted the honey from the wild hives, dipped a sprig of hyssop picked from the cliffside. Drink slowly, stranger: it does not remove the evil, but it softens the hour, and the burdened man needs his hour softened.
- •Fresh goat milk — a cup (base)
- •Wild honey — a spoonful (sweetness)
- •Sprig of hyssop — one branch (aroma)

- Fresh goat milk — a cup (base)
- Wild honey — a spoonful (sweetness)
- Sprig of hyssop — one branch (aroma)
Ingredients
- Goat milk (or whole milk) — 250 ml (base)
- Honey — 1 tbsp (sweetness)
- Fresh oregano or hyssop (or fresh thyme) — 1 small sprig (aroma)
Method
- Gently heat the milk without boiling, with the hyssop sprig.
- Remove from heat, cover, and let infuse for 5 minutes.
- Remove the herb, stir in the honey until dissolved.
- Pour into a cup and drink warm, in small sips.
How it was made : Milk, honey, and aromatic herbs were basic home remedies. Hyssop (ezov) appears frequently in biblical texts as a plant of purification. Sweetening was always done with honey, as cane or beet sugar did not exist in that region and era.
The contemporary twist : Serve as a biblical 'golden milk': add a pinch of cinnamon and cardamom for an evening chai version, sweet and soothing.
