Javanese Meal (serving javanais)
The traditional Javanese meal is built around nasi (rice), served at the center of the table, surrounded by lauk (protein accompaniments), sayur (vegetable preparations in broth or coconut milk), sambal (chili condiment), and kue or jajan (sweets, snacks). Everything is placed at once, without a serving order: each person composes their own plate. In priyayi (Javanese aristocracy) families, the meal is eaten on a mat or low table, with refinement but without ostentation, rice always remaining the sacred heart of the meal.

Santan, fresh coconut milk hand-pressed from grated coconut flesh, is the backbone of Javanese cuisine. It gives sayur their creaminess, opor their silky white sauce, and perfumes both savory dishes and sweets. In Kartini's Java, every priyayi household grated and pressed coconut daily — a fundamental feminine gesture, passed from mother to daughter.
