How it was made : Germinating legumes is an ancient, frugal practice in Indian cuisine, valued in Ayurvedic cooking for its lightness. The 'chaat' format — small tangy-spicy street snacks — adopted these sprouted salads in the 20th century as a healthy, economical option.
The contemporary twist : Served in a shot glass with a lime wedge, like a healthy 'bowl' from a film-set catering.
