- Black tea (Assam, Ceylon) — 1 spoonful per cup (infusion)
- Simmering water — 1 cup (extraction)
- Milk — a splash (smoothness)
- Sugar — to taste (optional)

- Water at 95°C — 250 ml (extraction)
- Semi-skimmed milk — 1 to 2 tbsp (smoothness, reduces bitterness)
- Sugar — 0 to 1 lump (optional) (sweetness)
Method
- Heat water just before boiling.
- Pour over the tea bag in a large mug.
- Steep for 3 to 5 minutes depending on desired strength — a real builder's tea steeps long.
- Remove the bag, add milk last, sweeten if desired, stir and enjoy piping hot.
How it was made : Tea became the British national drink in the 18th century thanks to East India Company imports. 'Builder's tea' — very strong, milky, and sweet — gets its name from construction workers who drank it to keep going. The milk/tea order has been a national debate for generations.
The contemporary twist : Serve in a giant Union Jack mug, or as a 'cream tea' accompanied by a scone.
