A very strong black tea, brewed hard, with a splash of milk and often sugar. No ceremony, just a chipped mug and a spoon.

Why this dish? Nothing more British and more anonymous than the strong, sweet 'cuppa' of the manual worker. For a graffiti artist who spends hours on scaffolding or in a hideout, builder's tea is the quintessential worksite drink — the one that warms paint-stained hands.
Forget tea rooms and pinkies up. Real tea is in a stained mug, brewed until the spoon stands up, a splash of milk and two sugars if you've worked hard. You drink it scalding between stencils, back against a wall, and it keeps you going better than any politician's speech. It's the only thing in this country that still works properly.

How it was made : Sweetened milky tea became the universal popular drink in the UK in the 20th century, nicknamed 'builder's tea' after construction workers. Its strength (long steeping) and sugar distinguish it from the delicate tea of the upper classes — it's a class marker as much as a habit.
