Ingredients
- Coffee beans (dark roast), finely ground — 8 to 9 g per cup (base)
- Filtered water at ~92°C — 25 to 30 ml extracted (short extraction)
- Sugar (optional) — to taste (adjustment)
Method
- Grind the coffee finely just before extraction to preserve aromas.
- Tamp the grounds evenly in the espresso machine's portafilter.
- Extract a short coffee (25 to 30 ml in about 25 seconds): it should flow like a syrupy stream topped with a hazelnut crema.
- Serve immediately in a small cup, drink it short. Sugar optional — purists skip it.
How it was made : Espresso, invented in Italy at the beginning of the 20th century, became ubiquitous in urban Europe. In Paris, the "petit noir" at the counter is a social ritual and a jolt — essential for anyone working nights.
The contemporary twist : Serve it "doubled" in a silver cup styled like a chrome helmet, two espressos playing in left-right stereo.
