I'll be honest with you: what I put my body through for Fantine was not a model, and I would never advise you to imitate me. But that juice, I really loved it for itself — that almost pungent green, the bitterness of kale softened by an apple, the lemon that bites. Drink it cold, in the morning, like a little vegetable wake-up, and keep it for what it is: a lively pleasure, not a punishment.

Why this dish? To portray Fantine's physical decline in *Les Misérables*, Anne Hathaway followed an extremely restrictive diet, supervised as often in Hollywood by nutritionists — an artistic sacrifice praised but controversial. Cold-pressed green juice is the emblem of this culture of dietary control among actresses, to be handled with lucidity rather than idealized.

Ingredients (period version)
- Kale or spinach — a generous handful (bitter green base)
- Cucumber — 1 (water and sweetness)
- Celery stalks — a few (salty freshness)
- Green apple — 1 (tangy sweetness)
- Lemon — 1/2 (acidity)
- Ginger — a small piece (spiciness)
Ingredients
- Kale — 50 g (a large handful) (bitter green base)
- Fresh spinach — 30 g (mild greens)
- Cucumber — 1 (water and sweetness)
- Celery stalks — 2 (salty freshness)
- Green apple — 1 (tangy sweetness)
- Lemon — 1/2, peeled (acidity)
- Fresh ginger — 1 cm (spiciness)
Method
- Thoroughly wash all produce and cut into pieces suitable for the juicer.
- Process fibrous ingredients (kale, celery) alternating with juicier ones (cucumber, apple) to facilitate extraction.
- Add peeled lemon and ginger at the end.
- Stir the obtained juice, taste and adjust with a little more apple if bitterness dominates too much.
- Serve immediately, well chilled; if no juicer, blend then strain through a clean cloth.
How it was made : Cold-pressed juice became widespread in California in the 2000s-2010s: low-speed extraction without heat is believed to better preserve nutrients. This drink became a marker of the Los Angeles wellness lifestyle, intimately linked to the film industry and its physical demands.
The contemporary twist : Serve in a glass jar with a reusable straw and a thin lemon slice — the 'morning routine' aesthetic embraced, without the diet dictum.
