Why this dish? The Sorek Valley and Timnah, lands of Delilah and Samson, were rich in fig trees. To get through the dry season, women pressed figs into compact cakes that would keep for months — the sweet reserve of a Philistine household.

Ripe figs dried in the sun, then kneaded with a little sesame and pressed into dense cakes. Sweet, chewy, they keep for a long time and nourish instantly — the 'energy bar' of antiquity.

When the sun beats down on Timnah, I gather the ripest figs and lay them on racks to drink the light. Then I crush them between my palms with a handful of seeds, and I press them into firm cakes that I store in jars. When winter comes, my fine friend, you will nibble just one and you will stand until evening. A prudent woman is never caught unprepared — remember that.

How it was made : 'Fig cakes' (debelim) are mentioned in the Bible as travel provisions and even as a remedy (a fig poultice heals King Hezekiah). They were pressed into a compact mass for storage and transport — a concentrated energy source for soldiers and shepherds.
