Method
- Melt ghee in a heavy-bottomed pan, add chickpea flour.
- Roast over low heat for 15–20 min, stirring constantly, until golden and nutty-smelling.
- Remove from heat, let cool a few minutes, then mix in sugar and cardamom.
- When the mixture is still warm but manageable, shape into balls between your palms.
- Press a pistachio sliver on top and let firm up before serving.
How it was made : Chickpeas have been cultivated in India for millennia; their flour roasted in ghee was an accessible festival treat. Slow roasting over a wood fire gave the characteristic flavor, impossible to achieve in haste.
The contemporary twist : A pinch of saffron infused in the ghee colors the laddoo a deep gold, worthy of a temple platter.
