Method
- Mix barley flour with a little cold water to avoid lumps.
- Add remaining water and whisk vigorously.
- Stir in fresh goat cheese and honey, whisk until smooth and thick.
- Optionally add a pinch of dried mint.
- Serve cool in a cup, stirring as you drink because the flour settles.
How it was made : Kykeon (κυκεών, 'the mixture') is one of the oldest beverages in Greek literature: described in the Iliad and Odyssey, it combined barley, water, cheese, and sometimes wine, honey, or herbs. A ritual version featured in the Eleusinian Mysteries. It was both a restorative and a liquid meal for workers and warriors.
The contemporary twist : Serve chilled as an 'ancient smoothie' in a terracotta cup, with a mint leaf — a recovery drink ahead of its time for rowers and athletes.
