Blåbärssoppa, warm blueberry soup

Why this dish? The sweet drink of Swedish athletes, served for decades at the great Vasaloppet ski race. Quick sugar and antioxidants from wild blueberries: exactly the energy profile of a golfer walking five hours on a course, water bottle within reach.

Idrottsdryck (traditional sports drink)

A blueberry soup-drink, warm or cold, slightly thickened and sweetened. Thinner than a compote, more nourishing than juice: a gentle, tangy boost between holes.

At home, blåbärssoppa has been the athlete's drink forever — ask any Vasaloppet skier! I liked it not too thick, just enough to stick to your ribs. On the course, when the fairway wind tires you and there are nine holes left, a sweet sip of blueberry and you're back. Concentration needs feeding too, you know.

Ingredients
  • •Wild blueberries — one large bowl (base, sugar, and antioxidants)
  • •Water — to desired consistency (liquid)
  • •Sugar — to taste (quick energy)
  • •Potato starch — a little (light thickener)
How it was made : Blueberry soup is a classic in Swedish förskola (preschools) and endurance races; it has been served warm to Vasaloppet skiers since the early 20th century as a quick energy boost. Blueberries, picked in abundance from Nordic forests thanks to the right of public access (allemansrätt), were dried or jarred to last through winter.
