At home we'd pick the flower umbels in June, when they perfume the whole garden, and make a syrup for the year. You put a little in a glass, top up with water, and you have summer in Scania in your mouth, even in the middle of a Bavarian winter.

Why this dish? Nilsson, a Wagnerian soprano, cared for her voice with iron discipline: no alcohol or spices on performance days. The Swedish tradition of saft (fruit or flower syrup diluted in water), a non-alcoholic beverage gentle on the throat, perfectly evokes this vocal hygiene and the Nordic orchard.

- Fresh elderflowers — 20-25 umbels (floral aroma)
- Sugar — 1.5 kg (preservation, sweetness)
- Water — 1.5 L (base)
- Untreated lemons — 3 (acidity)
- Citric acid — 50 g (preservation, zest)
Method
- Gently shake the umbels to remove insects and dust (do not wash to keep the fragrant pollen).
- Bring water and sugar to a boil until dissolved, remove from heat.
- Slice the lemons and add them with citric acid and flowers to the hot syrup.
- Cover and let infuse for 24-48 hours in a cool place.
- Strain through cheesecloth, pour into sterilized bottles.
- Store cool and dilute 1 part syrup with 4-6 parts cold or warm water.
How it was made : Saft (berry or flower syrup for dilution) has been a pillar of the Swedish pantry since the 19th century, capturing the brief Nordic fruit and flower season. Elder (fläder) and blackcurrant are among the most cherished. Before commercial citric acid, lemon and long boiling ensured preservation.
The contemporary twist : Serve as a non-alcoholic spritz: elderflower cordial, sparkling water, ice, and a cucumber slice — the chic terrace 'fläderdryck'.
