Method
- Cut a cross into the figs without separating them completely.
- Fill the center with a little fresh goat cheese.
- Drizzle with honey.
- Sprinkle with thyme (and toasted sesame seeds for crunch).
- Serve immediately, at room temperature.
How it was made : Figs, honey and goat cheese were among the most common sweets in the Greek world, where sugar did not exist: honey was the only sweetener. They were eaten raw, outside of main meals, as a daily treat. The specific combination remains a plausible evocation rather than a dish attested at Archilochus' table.
The contemporary twist : Passed under the grill for 2 minutes to caramelize the honey, served warm as an instant dessert.
