Why this dish? Spiced chai is among the known habits of Benazir Bhutto. In Pakistan, one never receives, negotiates, or reconciles without a cup of chai: it is the drink of hospitality and long political conversations.
There is no visit, no interview, not even a difficult negotiation that we begin without first offering chai. I want it strong, the tea boiled long with milk, and always the cardamom crushed with the flat of the hand — that is what wakes everything up. They say that whoever shares your chai shares a bit of your trust; I have poured many cups, for friends and for adversaries. Drink it hot, without haste: it is in that slowness that true words are spoken.
Ingredients
- •Strong black tea — to infuse long (base)
- •Milk — equal parts with water (creaminess)
- •Green cardamom — a few crushed pods (signature fragrance)
- •Ginger, cinnamon — to taste (warm spices)
- •Sugar — as desired (sweetness)
How it was made : Chai simmered on a corner of the fire, and the more it was brought to a boil, the more body it gained. The spices varied from house to house — each family keeping its secret ratio of cardamom and ginger.
