Dorayaki brought back from Tokyo

Tokyo always fascinated us — that's where our tracks became a drawn film, with master Matsumoto at the helm. Between sessions, we'd stop for a dorayaki: two small soft golden disks, closed around that sweet bean paste, soft like a track's finale. It's round, it's tender, it's shared between two — one for you, one for me. The best way to end the day on a good note, Japanese style.

Why this dish? The duo worked extensively with Japan — their album Discovery became the animated film Interstella 5555, drawn under the direction of Leiji Matsumoto, and their stays in Tokyo left a mark on their imagination. Dorayaki, a Japanese sweet emblematic of manga heroes, is a festive nod to this Japanese friendship.

Ingredients (period version)
- Eggs — 2 (binder and softness)
- Sugar — some (sweetness)
- Honey — one spoon (flavor and color)
- Wheat flour — as needed (batter)
- Sweet azuki bean paste (anko) — for filling (signature filling)
Ingredients
- Eggs — 2 (binder and softness)
- Sugar — 60 g (sweetness)
- Honey — 1 tbsp (flavor and color)
- Flour — 120 g (batter)
- Baking powder — 1/2 packet (fluffiness)
- Water — 2 to 3 tbsp (thin the batter)
- Azuki bean paste (anko) — about 200 g (signature filling)
Method
- Whisk the eggs with sugar and honey until the mixture lightens.
- Fold in sifted flour and baking powder, then thin with a little water to get a smooth, slightly runny batter. Let rest for 15 minutes.
- Cook small disks of batter in a hot, lightly oiled pan: when bubbles appear, flip and brown the other side.
- Fill one disk with a generous spoonful of anko in the center, cover with a second disk, and gently press the edges together to seal into a dome.
How it was made : Dorayaki, popularized in Japan in the 20th century, gets its name and round shape from a gong ("dora"). It became a staple sweet of Japanese pop culture, inseparable from the manga universe that Daft Punk frequented.
The contemporary twist : Mark the top of one disk with a hot iron to make a thin horizontal line, like the glowing visor of a helmet.
