Nothing imported, nothing fancy: maize flour, a little leaven, and oil that sizzles. This too is an economy that works — women frying on street corners, selling, living from their labor. How it was made : Vitumbuwa belong to the large family of leavened fried fritters in southern Africa. Before maize and wheat arrived, millet and sorghum pastes were fried in fat. Street frying, mainly run by women, is a pillar of the informal economy in Zambian markets.
