flipCouscous with Seven Vegetables and Lamb
Couscous with Seven Vegetables and Lamb
Why this dish? Couscous is the quintessential Algerian dish of brotherhood — for Fridays, weddings, reunions. Fanon, who embraced a people's cause to the point of wanting to be buried in Algerian soil, sat at these communal platters where each person reaches into the same mound of semolina. Sharing couscous is the very image of the community he defended.
A mountain of steamed durum wheat semolina, crowned with tender lamb and vegetables simmered in a golden broth with chickpeas. The single dish set at the center of the table, around which everyone gathers.
You had to see it: one single dish, immense, and ten hands reaching in together. The semolina, you roll it, steam it, roll it again — the patience of women I watched with respect. On top, the lamb, the zucchini, the turnips, the saffron-colored broth. That day, for a moment, you forget the war; you feed from the same mound, and I understand that these people have never ceased to be a nation. Eat from the center, never dig into your neighbor's portion: that is his share, respect it.
- •Durum wheat semolina — a large platter (base grain)
- •Lamb (shoulder, neck) — a nice piece (festive meat)
- •Turnips, carrots, zucchini, onions — according to the household (broth vegetables)
- •Chickpeas — one bowl (legume)
- •Saffron, ginger, ras-el-hanout, smen (fermented butter) — to taste (aromatics)

Ingredients (period version)
- Durum wheat semolina — a large platter (base grain)
- Lamb (shoulder, neck) — a nice piece (festive meat)
- Turnips, carrots, zucchini, onions — according to the household (broth vegetables)
- Chickpeas — one bowl (legume)
- Saffron, ginger, ras-el-hanout, smen (fermented butter) — to taste (aromatics)
Ingredients
- Medium semolina — 500 g (base grain)
- Lamb shoulder — 800 g (meat)
- Turnips — 3 (vegetable)
- Carrots — 4 (vegetable)
- Zucchini — 3 (vegetable)
- Chickpeas soaked or canned — 200 g (legume)
- Onions — 2 (broth base)
- Ras-el-hanout, ginger, saffron (or turmeric) — 1 tsp each (spices)
- Smen or butter — 1 tbsp (umami richness)
- Olive oil, salt, pepper — QS (seasoning)
Method
- Brown the lamb and onions in oil at the bottom of the couscoussier, add spices, cover with water.
- Meanwhile, moisten the semolina with salted water and a drizzle of oil, rub it with your hands.
- Steam the semolina over the broth (3 rounds of 15 min), rubbing it between each round with a pat of smen.
- Add the chickpeas to the broth, then the vegetables in order of cooking time (turnips, carrots, then zucchini).
- Mound the semolina in a dome, make a well at the top, arrange meat and vegetables, ladle broth over.
- Serve the remaining broth (and harissa) on the side.
How it was made : Couscous was made — and still is — by hand: the semolina rolled drop by drop in a large wooden bowl (gasâa), steamed in a clay or copper couscoussier. It was a whole morning's work, often collective, with neighbors lending a hand. A dish that speaks of long time and neighborhood solidarity.
The contemporary twist : To honor Fanon's gesture — eating from the same dish — serve it in a single large flat pot placed at the center, without individual plates, just spoons.
