Curdled Milk Rice — The Convalescent's Dish
Why this dish? Her notes recall that Stark contracted several serious digestive illnesses during her travels. Very tender rice mixed with curdled milk (yogurt) and a little mint is the convalescent dish everywhere in the Middle East—gentle on an upset stomach.
Rice cooked until almost creamy, cooled, then mixed with thick yogurt, a pinch of salt and dried mint. Cool, tangy and soothing, it is what is given to sick stomachs across all latitudes of the Middle East.
Travel has its fevers, and more than once my stomach betrayed me at the bottom of a lost valley. On those days, no feast: I was brought a little rice cooked until soft, drowned in cool curdled milk and lifted with a pinch of mint. It slips down easily, it soothes the guts, and the milk's acidity gently sets the body right. It is an old wives' remedy, they will say—but no pharmacy drug ever comforted me so much under a tent.

Ingredients
- Short-grain or basmati rice — 100 g (soft base)
- Thick plain yogurt (Greek-style) — 200 g (tangy freshness)
- Dried mint — 1/2 tsp (digestive fragrance)
- Salt — 1 pinch (seasoning)
- Drizzle of olive oil — 1 tsp (optional) (smooth binder)
Method
- Cook the rice in plenty of lightly salted water until very tender, almost mushy.
- Drain and let cool to lukewarm or room temperature.
- Stir in yogurt, salt and dried mint rubbed between your fingers.
- Mix until creamy; adjust with a little water if needed.
- Serve cool or at room temperature, by small spoonfuls.
How it was made : Curdled milk (laban, mast) is everywhere in the Middle East a food and remedy: its fermentation makes it digestible and soothes intestinal troubles. Mixed with tender rice, it constitutes food for the sick, children and the elderly—light, filling, safe for a stomach weakened by travel fevers.
The contemporary twist : A grating of cucumber and a drizzle of olive oil turn this remedy into a fresh 'mint yogurt bowl' quite presentable at the table—without losing any of its soothing virtue.
