Method
- Roll out the leavened dough in a buttered tart pan and let it rise for 30 minutes; preheat the oven to 200°C.
- With your fingertips, make small indentations on the surface and dot with small knobs of butter.
- Whisk together the cream, eggs, sugar, and vanilla sugar to make the *goumeau*.
- Pour the mixture over the dough and bake for 20 to 25 minutes until the galette is golden and the cream is set.
- Let it cool slightly and enjoy the same day.
