A short, strong coffee, served black and burning hot in a small cup. Not a gourmet pleasure: a working tool, drunk endlessly throughout the day.

Coffee, you see, is not a comfort — it's a discipline. I drank it cup after cup, short and black, until thought stretched tight like a rope. At the Flore, the waiter knew my seat and my pace; as long as there was coffee in the cup, there were words on the page. Don't sugar it too much: it must remind you that nothing is given, that everything must be conquered, even staying awake.

Ingredients

How it was made : In the cafés of Saint-Germain-des-Prés in the mid-20th century, coffee was taken short, at the counter or in the dining room, and you could stay for hours for the price of a single cup. This economic model made the café the office of impecunious writers.
