- Celery stalks — 2 (bitter mineral note)
- Cucumber — 1/2 (freshness and volume)
- Green apple — 1 (sweet-tartness)
- Lemon — 1/2 (juice) (bright acidity)
- Fresh ginger — 1 small piece (tonic)
- Ground lemon myrtle — 1 pinch (signature perfume)
- Cold water — a little (fluidity)
Method
- Wash all vegetables.
- Juice spinach, celery, cucumber and apple in a juicer (or blend then strain).
- Add lemon juice, grated ginger and the pinch of lemon myrtle.
- Thin with a little water if needed, serve immediately very chilled.
How it was made : Green vegetable juices became part of Californian wellness culture from the 2000s-2010s, extending the 'detox' diets popularised in Hollywood. Before electric juicers, leaves were pressed by hand or through a sieve.
The contemporary twist : Served in a frosted glass with a cucumber ribbon, like a red-carpet cocktail... without alcohol.
