Ingredients (period version)
- Sesame seeds — two handfuls (crunchy, oily body)
- Honey — enough to bind (sweet binder and preservative)
- Dried thyme (optional) — a pinch (flavor)
Ingredients
- Sesame seeds — 200 g (base)
- Honey — 150 g (binder)
- Water — 1 tbsp (helps cook the honey)
- Pinch of salt and lemon zest (optional) — to taste (balance, modern touch)
Method
- Toast the sesame seeds in a dry pan until golden and fragrant, then set aside.
- Cook the honey with water over low heat until it thickens and runs (about 5 minutes).
- Off the heat, stir in the toasted sesame seeds (and salt/zest) and mix vigorously.
- Spread the mixture on an oiled sheet or parchment paper, about 1 cm thick, and smooth out.
- Let cool for 30 minutes, then cut into bars before it hardens completely.
How it was made : Sesame and honey pastries are attested from the Archaic period; Herodotus mentions sesame and honey cakes, and pasteli remains a traditional Greek confection today. Its richness in fats and sugars and its long shelf life made it ideal ration for travel, armies and offerings.
The contemporary twist : Pour into small individual squares wrapped in fig leaf, like an "ancient" energy bar ready to take away.
