Sweet Emmer Beer (heqet)

Why this dish? Bread and beer form the pair 'ta-heneqet' repeated in all offering formulas to Ra. Beer is also at the heart of the solar myth: to prevent the goddess Hathor-Sekhmet, the Eye of Ra, from annihilating humanity, the god had thousands of jars of beer dyed blood-red; drunk, the goddess calmed down and humans were saved.

A thick, slightly fizzy, low-alcohol drink, golden and cloudy, sweetened with dates. More nourishing than thirst-quenching, it is the national drink of everyone, from peasants to gods.

It is I, Ra, who saved humanity through beer. My daughter with the flame-filled gaze wanted your ruin; so I had the brew made and the dates reddened, and spread it over the fields like a great scarlet lake. She drank, thought she was drinking the blood of mortals, and fell asleep appeased. Drink then in turn this emmer liquor sweetened with dates, and remember: what was meant to destroy you has become your celebration.

How it was made : Contrary to the legend of 'soaked bread,' analyses by Delwen Samuel showed that Egyptians malted part of the grain and gently heated the porridge to release sugars before fermentation. The beer, thick and nourishing, was drunk through a filtering straw to avoid residues. It was sweetened with dates or honey.
