Buttermilk with ginger and long pepper (refreshing drink)
Why this dish? Under the Indian heat, from the palace of Ayodhyā to the clearings of exile, yogurt beaten with water was everyone's drink — refreshing, digestive, beneficial according to Ayurveda. A daily sip for Rāma as for the humblest villager.
Yogurt whipped with cool water, spiced with ginger, salt and long pepper. Tangy, spicy, invigorating: the ancestral salted 'lassi' that refreshes and soothes the stomach.
When the sun weighs on your neck like the hand of an angry god, nothing beats curd beaten with clear water. You whip it with the churn until it foams and lightens, then grate ginger and crush long pepper. A pinch of salt, never sugar, for this drink is made to restore strength, not to spoil. Drink it slowly in the shade, and you will feel the inner fire calm like a quarrel resolved.
- •Yogurt (curd) — one bowl (fermented base)
- •Fresh water — as much (dilution)
- •Fresh ginger — a piece, grated (spice)
- •Long pepper (pippali) or black pepper — a pinch (pungency)
- •Salt — a pinch (seasoning)

How it was made : Takra (buttermilk) and mantha (beaten milk drink) are long mentioned in Ayurvedic texts as digestive beverages. Curd was beaten with a wooden churn in an earthen jar, and spiced with ginger, long pepper, and salt — chili (post-1492) being naturally absent.
The contemporary twist : Serve in a frosted copper cup, with a thin slice of ginger on the rim — the 'salted lassi' as a premium summer refresher.
