Why this dish? On the road from Troezen to Athens, along the Isthmus of Corinth where he defeated brigands, Theseus walked for days. The kykeon — barley, water, grated cheese, and herbs — was the meal-drink of the walker and warrior, both nourishing and thirst-quenching.

Method
- Whisk the barley flour into the fresh water to avoid lumps.
- Add the crumbled goat cheese and stir until it blends into the liquid.
- Mix in the chopped mint and a pinch of salt.
- Let rest for 5 minutes so the barley swells slightly.
- Stir again and serve immediately, cool, in a wide cup.
How it was made : The kykeon ("mixture") is attested as early as Homer: in the Iliad, one is prepared with Pramnian wine, grated goat cheese, and barley flour. The simple water version was the meal-drink of peasants, walkers, and soldiers; a ritual version also featured in the Eleusinian Mysteries.
The contemporary twist : Served chilled in a glass, sprinkled with mint and a drizzle of olive oil, as a savory "ancient smoothie."
