Why this dish? Hot chocolate was the beloved drink of the aristocratic Viennese salons Mozart frequented. Between lessons and performances, it was enjoyed frothy and fragrant during the afternoon Jause.

You beat it with a little molinillo until it froths — that is the whole art, believe me — with a hint of cinnamon that makes it royal. Ingredients
