- Whole grain (quinoa, brown rice or barley) — one bowl cooked (base)
- Chickpeas — a handful (roasted protein)
- Baby greens and kale — a good handful (bitter greens)
- Avocado — half (creaminess)
- Lemon, olive oil — for dressing (acidity)
Ingredients
- Quinoa — 150 g cooked (base)
- Canned chickpeas — 1 can (240 g drained) (protein)
- Smoked paprika and cumin — 1 tsp each (chickpea spices)
- Kale — 1 handful, shredded (greens)
- Baby spinach — 1 handful (mild greens)
- Avocado — 1/2 (creaminess)
- Lemon — 1 (juice) (acidity)
- Olive oil — 2 tbsp (vinaigrette)
Method
- Drain and dry chickpeas, toss with a drizzle of oil, paprika and cumin, then roast at 200°C for 25 minutes until crispy.
- Massage shredded kale with a little lemon juice and oil to soften.
- Cook quinoa and let it cool to warm.
- Make vinaigrette by whisking lemon juice, olive oil, salt and pepper.
- Assemble bowl: quinoa, kale, spinach, roasted chickpeas, sliced avocado, then drizzle with vinaigrette.
How it was made : The composed bowl became popular in California in the 2010s as a symbol of West Coast cuisine, based on vegetables, legumes, and whole grains—a legacy of the farm-to-table movement and Los Angeles wellness culture.
The contemporary twist : Sprinkle with pumpkin seeds and a dash of hot sauce to wake up the flavors.
