- Fresh palm wine (Afro-Caribbean grocery) — 1 liter (drink, serve very cold)
Method
- Since palm wine is rare outside Africa, buy fresh bottled palm wine from an Afro-Caribbean aisle rather than trying to recreate it.
- Keep refrigerated and consume within 1-2 days: fermentation continues and makes it increasingly sour.
- Serve very cold in calabashes or small cups.
- According to tradition, pour a splash on the ground before the first sip, as a tribute to the water spirits.
How it was made : The palm inflorescence was tapped and a calabash hung to collect the sap overnight. Without any added yeast, wild ferments transformed it in a few hours: sweet and low-alcohol in the morning, sharply sour and stronger by day's end. It was the everyday drink, used for weddings and libations.
The contemporary twist : Served as a "Delta aperitif" in a half-calabash, with a few grains of paradise to crunch alongside and awaken the palate.
