- Aquavit (or cognac) — a good splash (elevating alcohol)
- Sugar — optional, little (barely sweetens)
Ingredients
- Filter or press coffee, strong — 150 ml (base)
- Aquavit (or cognac) — 2 to 3 cl (alcohol)
- Sugar — 1 cube (optional) (sweetens)
Method
- Prepare a strong black coffee and pour it very hot into a sturdy cup.
- Add the sugar cube if desired, without stirring too much.
- Pour the aquavit (or cognac) in a stream over the back of a spoon.
- Drink hot, in small sips, ideally by the fireside.
- Non-alcoholic version: replace the spirit with a few drops of caraway extract and a dash of syrup, for aroma without intoxication.
How it was made : Karsk originated in the Trøndelag countryside, where alcohol was measured "by the coin": you filled the cup with coffee until a coin at the bottom disappeared, then added spirit until it reappeared. A fortifying drink for harsh winters, it spread to the towns and cafés where Ibsen spent his days.
The contemporary twist : Served in a small clear glass to show the two layers of coffee and aquavit, with a burnt orange zest on top.
