Quando I was working on a piece, I could spend hours on a single measure, going over it again and again until it sounded right — and always a cafezinho within reach, bem doce, very sweet, in a little cup. You drink it hot, in one go, and you go back to work. Without it, how can you find the silence between the notes?

Why this dish? Bossa nova was born in the apartments and small bars of Ipanema and Copacabana, around guitars and coffee cups. João, a perfectionist insomniac, spent entire nights searching for THE right chord — cafezinho was the discreet fuel of those creative vigils in Rio.

Ingredients (period version)
- Finely ground coffee — generous (base)
- Water — a small saucepan (infusion)
- Sugar — abundant (sweetness)
Ingredients
- Finely ground roasted coffee — 4 heaping tbsp (base)
- Water — 500 ml (infusion)
- Sugar — 3 to 4 tbsp (sweetness)
Method
- Bring the water to a simmer with the sugar, until dissolved.
- Remove from heat, add the ground coffee, and let steep for 2 minutes.
- Strain through a cloth filter (the traditional coador) or a paper filter.
- Serve immediately, very hot, in small cups.
How it was made : Brazil has been the world's leading coffee producer since the 19th century, and cafezinho became a universal social ritual. It was filtered through a coador de pano, a flannel filter mounted on a hoop, and sugar was added to the cooking water from the start, never at the end.
The contemporary twist : Serve it at the end of the meal with a square of doce de leite, or pour it over ice for a summer Ipanema-style version.
