Why this dish? When Theseus sails to Crete with the seven young men and seven young girls offered as tribute, he needs provisions that will not spoil at sea. Dried figs, the glory of Attica, perfumed with thyme and a little honey, are the sailor's reserve and the comfort of the long voyage.

- Dried thyme — 1 tsp (herb)
- Honey — 2 tbsp (binder)
- Toasted sesame seeds — 3 tbsp (coating)
- Bay leaves — 2 to 3 (preservation aroma (optional))
Method
- If the figs are too dry, steam them for 2 minutes to soften, then pat dry.
- Make a small slit in each fig, sprinkle the inside with thyme, and press closed.
- Coat each fig with a thin film of honey.
- Roll each fig in the toasted sesame seeds.
- Layer tightly in a jar with a few bay leaves; store in a dry place.
- Enjoy as is, or sliced over a piece of maza.
How it was made : Ischades (dried figs) were a flagship product of Attica, so renowned that their export was reportedly regulated. Sun-dried, they kept for months and were a common travel ration and snack (tragema). Honey and salt served everywhere as natural preservatives before any refrigeration.
