Why this dish? Genesis says Abel offered “the firstborn of his flock and their fat.” This recipe is inspired — without reproducing the rite — by that gesture: a milk-fed lamb roasted so that its fat, the most precious part, is rendered slowly to glaze the meat.

From the best of my flock, I kept neither the lame nor the weak: I took the firstborn, without blemish, and its fat for the flame. I pass it over the fire slowly, I rub it with bitter herb gathered at the field's edge, and I baste, I baste again, so that nothing dries. - Milk-fed lamb (shoulder or leg) — a quarter (meat)
- Fat from the fat-tailed sheep — a good portion (basting fat)

- Rock salt — to the hand (seasoning)
Ingredients
- Leg or shoulder of lamb — 1.5 kg (meat)
- Sheep fat (or clarified butter) — 80 g (basting)
- Rocket and chicory leaves — 2 handfuls (aromatic / garnish)
- Coarse salt — 2 tsp (seasoning)
Method
- Take the meat out 1 hour before and rub generously with coarse salt.
- Melt the sheep fat gently to obtain a golden liquid butter.
- Roast the lamb on a spit over embers (or in the oven at 180°C), basting every 15 minutes with the melted fat.
- Allow about 1 hour for pink meat; rest 10 minutes.
- Slice, arrange on a bed of fresh bitter herbs, and drizzle with the cooking juices.
How it was made : In ancient Near Eastern sacrifices, fat (the “firstfruits”) was the prestigious portion, burned or reserved for honor; lamb meat, costly, appeared only during feasts and offerings, never in the shepherd's daily life.
The contemporary twist : A touch of grape molasses (dibs) at the end of cooking glazes the meat with a dark sheen — a caramel without refined sugar, true to the era.
