Why this dish? Ada belongs to the British aristocracy at the heart of the Indian Empire: kedgeree, inherited from Indian khichri and adopted by English tables, is the king of breakfast in a house like hers. A mathematician working from dawn appreciated this hearty, warm meal ready on the buffet.

Allow me, if you please, to present the dish I gladly partake of at dawn, before my mind sets to work on numbers. It comes from India, and the staff sets it under a silver cloche: a rice tinted with spices, the haddock broken with a fork, the hard-boiled egg crumbled on top. I recommend you be generous with the pepper and the lemon, for therein lies all the spirit of the thing. Nothing disposes the understanding to calculation better than a solid and well-seasoned breakfast.
