Why this dish? Inspired by the gifts the Celts made to the gods and spirits before battle: dairy, honey, first fruits deposited near springs and sacred hills. To Nemain and the war goddesses, offerings were made to appease their fury. This bowl of curds and honey evokes — without reproducing any sacred rite — these gestures of offering.

- Wild honey — a drizzle (sweetness)
- Blueberries (*fraughans*) or blackberries — a handful (seasonal fruit)
- Hazelnuts — a few, crushed (crunch (optional))
Ingredients
- Fromage blanc or curds (or thick plain yogurt) — 400 g (base)
- Honey — 2 tbsp (sweetness)
- Fresh blueberries (or blackberries) — 150 g (fruit)
- Crushed toasted hazelnuts — 30 g (texture (optional))
Method
- Divide the curds (or fromage blanc) among earthenware or wooden bowls.
- Drizzle generously with honey.
- Scatter with blueberries and, if desired, crushed hazelnuts.
- Serve immediately, well chilled.
How it was made : Dairy — curds, whey, fresh cheeses — was consumed daily and featured among offerings. The Celts deposited gifts (food, metal objects thrown into water) near sacred sites. Honey and wild berries (bilberries, blackberries, sloes) provided the only true sweets.
The contemporary twist : Layer in a glass with a fine base of toasted hazelnuts, like a contemporary Nordic dessert.
