Method
- For the dulce de leche: bring milk, sugar, and a pinch of baking soda to a simmer, then let reduce over low heat for 1.5 to 2 hours, stirring regularly, until golden brown and coating the spoon.
- Prepare a smooth pancake batter with flour, eggs, and milk; let rest 30 minutes.
- Cook thin pancakes in a buttered pan.
- Spread a generous layer of warm dulce de leche on each pancake.
- Roll the pancakes and cut them in half; serve warm.
How it was made : Argentine legend attributes the birth of dulce de leche to a forgotten pot on the fire, but milk jam exists in various forms throughout Latin America; already in the 19th century, reducing milk and sugar allowed a precious food to be preserved for a long time. In Gardel's time, dulce de leche was a staple of snacks and popular desserts in Buenos Aires.
The contemporary twist : Dust the rolled panqueques with a veil of powdered sugar and pass them under the grill for 30 seconds to lightly caramelize the surface, as a nod to confiterías.
