The braai is sacred among us — as soon as there's a reason to rejoice, we light the fire and the boerewors sizzles in a spiral on the grid. When I came back from London with gold, the whole village danced, and the smell of meat rose to the sky. You put a spoonful of well-spiced chakalaka on the side, take a piece of pap, and eat standing up laughing with your people. That day, I understood my medal wasn't mine: it belonged to all of them.

Why this dish? At every triumphant return, the village and the whole country celebrate with a braai, the barbecue that is the heart of South African conviviality. When Caster came home Olympic champion, it was with community feasts, songs, and grills that she was welcomed in Limpopo.

Ingredients
- Boerewors (South African sausage, or seasoned beef sausage meat) — 1 kg (grill)
- Onions — 2, sliced (chakalaka base)
- Grated carrots — 3 (chakalaka)
- Red and green bell pepper — 1 each, in strips (chakalaka)
- Canned white beans — 1 can (400 g), drained (chakalaka)
- Curry powder + chili — 2 tsp + to taste (spices)
- Crushed tomatoes — 400 g (sauce)
Method
- Prepare the coals (or a very hot grill).
- For chakalaka: sweat onions and peppers in oil, add curry and chili, let flavor 1 min.
- Add carrots, tomatoes, and beans; simmer 15-20 min until thick, salt.
- Place the boerewors coiled in a spiral (held with a skewer) on the grill.
- Grill 12-15 min, turning once, until golden and just cooked through.
- Serve the sausage cut into pieces, with chakalaka and a ball of pap.
How it was made : The braai is a structuring social ritual in South Africa, cross-cutting all communities. Boerewors ("farmer's sausage" in Afrikaans) follows very codified traditional proportions of meat and spices. At Pedi celebrations, the slaughter of an animal and the sharing of grilled meat seal the event.
The contemporary twist : Serve chakalaka in small individual bowls and sliced boerewors on a wooden board, "victory street food" style.
