Archer's Snack: Dark Bread, Hard Cheese, and Apple
Why this dish? What could be more telling for William Tell than the apple? The hunter's snack — dark bread, hard alpine cheese, and an apple from the orchard — is what he slipped into his pouch for long mountain hikes.
Not a cooking process, but the emblematic assembly of the nomadic mountaineer: a thick slice of dense dark bread, a piece of hard cheese that fears neither cold nor bag, and a crisp apple. The trilogy that sustains the body far from any hearth.
When I leave for the heights, no need for great gear: a crust of dark bread, a shard of hard cheese from the alpine pasture, and a good red apple in the pouch. The cheese does not rot, it only hardens, and the older it is, the better it sings under the tooth. The apple, ah, the apple — I know a thing or two about that, friend, and I much prefer to crunch it than to see it on a head. That is the meal of a man who walks free, without table or master.
- •Dark bread (rye and wheat) — one thick slice (travel starch)
- •Hard alpine cheese — one piece (protein and signature)
- •Orchard apple — one (freshness and acidity)

Ingredients (period version)
- Dark bread (rye and wheat) — one thick slice (travel starch)
- Hard alpine cheese — one piece (protein and signature)
- Orchard apple — one (freshness and acidity)
Ingredients
- Sourdough rye bread — 2 thick slices (travel starch)
- Hard cheese (Sbrinz type) — 60 to 80 g (protein and signature)
- Tart apple (Boskoop type) — 1 (freshness and acidity)
- Butter (optional) — a little (binder)
Method
- Cut the rye bread into thick slices (butter lightly if desired).
- Cut the hard cheese into shards using a knife or cheese plane.
- Slice the apple into wedges just before eating to keep it crisp.
- Assemble everything in a cloth or box: ready to take to the mountain.
How it was made : The bread + hard cheese duo is the archetype of the portable alpine meal: hard cheese was precisely developed to keep and travel. The apple, a fruit of the common orchard in Europe well before 1492, added freshness and vitamins to long treks.
The contemporary twist : Presented as a "hunter's lunchbox" — rye bread, Sbrinz shavings, and apple sliced in a fan — it is the most authentically Swiss hiking picnic there is.
