Why this dish? To cross the Alps in fifteen days of snow and precipices, one needed supplies that would not spoil and could fit in a satchel. Dried figs and dates, crushed into compact cakes with almonds, provided the concentrated energy a starving army needed on heights where nothing grew.

Dense blocks of dried figs and dates, ground with toasted almonds and a hint of seeds, pressed into travel cakes. Sweet, energizing, nearly imperishable: the ration for the great crossing.

When we climbed toward the icy passes, grain ran short and snow blocked the roads. Then my men pulled from their satchels these fig-and-date cakes we had pressed before the ascent, hard as stone but soft under the tooth. A single one of these blocks, chewed slowly, restored warmth to a frozen man's legs. Keep them dry, stranger, and they will follow you from one end of the world to the other, as they followed me to the heart of Italy.

How it was made : Dried figs and dates, rich in sugars and easy to transport, were prime travel foods throughout the ancient world, especially in the Punic world oriented toward North Africa and the East (the date comes from oases). Compacted with nuts, they formed dense, durable provisions ideal for long military marches where grain supplies became uncertain.
