Vareniki s Vishnei (Sour Cherry Dumplings)
Why this dish? In the Ukraine of her childhood, summer cherry vareniki marked the happy pre-war days — a sweet-sour taste that soldiers at the front, starving for black bread, kept in memory as an image of peace.
Small boiled dough parcels filled with juicy sour cherries, served warm under a blanket of sour cream and a dusting of sugar: the festive sweetness of the southern USSR.
We don’t live on powder and black bread alone, comrade. In summer, back home, we picked vishni, those sour cherries, and the women pinched the dough around them until they formed a row of little crescents. We dropped them into boiling water, and when they floated to the surface, we knew they were ready. A spoonful of smetana, a little sugar, and the red cherry juice ran down your fingers — that’s the taste I saw again, lying in the mud, my eye at the scope.

Ingredients
- All-purpose flour — 300 g (dough)
- Egg — 1 (binder)
- Warm water — 120 ml (dough)
- Salt — 1 pinch (dough seasoning)
- Pitted sour cherries (morello) — 300 g (filling)
- Sugar — 3 tbsp + for serving (sweetness)
- Cornstarch — 1 tsp (absorb juice)
- Sour cream (smetana) — for serving (garnish)
Method
- Knead flour, egg, salt, and water into a soft dough; let rest for 30 minutes under a cloth.
- Mix pitted cherries with sugar and cornstarch to limit juice.
- Roll out the dough thinly, cut into rounds, place 2–3 cherries in the center.
- Pinch the edges firmly to seal each dumpling.
- Poach vareniki in simmering salted water for 3–4 minutes; they are done when they float.
- Drain, serve warm with smetana and a dusting of sugar.
How it was made : Vareniki were prepared by the family, with many hands, during summer harvests. Sour cherries reigned in the southern USSR; the juice was carefully collected and used as syrup or drink.
The contemporary twist : A warm morello coulis and a few pistachio crumbles for a contemporary pastry presentation.
