Why this dish? By eating six pomegranate seeds offered by Hades, Persephone sealed her fate and her cyclical return to the Underworld: no fruit is more intimately linked to her. This dish makes a bittersweet offering to her memory.

- Liquid honey — 2 tbsp (glaze)
- Walnut halves — 40 g (crunch)
- Fresh cheese or thick yogurt — 150 g (optional) (creamy base)
- Mint leaves — a few (freshness)
Method
- Seed the pomegranate, collecting all the arils without the bitter white membrane.
- Coarsely chop the walnuts and toast them in a dry pan for 2 minutes.
- Place the fresh cheese or yogurt at the bottom of a bowl (optional).
- Distribute the pomegranate seeds, sprinkle with walnuts, drizzle generously with honey.
- Garnish with chopped mint and serve chilled.
How it was made : The pomegranate, fruit with hundreds of seeds, symbolized in the Greek world both marriage, fertility, and connection to the dead—hence its place in the myth of Persephone. It was eaten plain or with honey, without any added sugar.
The contemporary twist : Presented in verrines as a festive dessert, named "The Six Seeds," with half a pomegranate arranged alongside.
