My mother would put a drop of cherry jam on top. It's full of protein, so my coaches couldn't complain too much. Warm, with a spoonful of smetana — for me, that's the taste of happiness.

- Egg — 1 (binder)
- Flour (or fine semolina) — 3 tbsp + a little for shaping (structure)
- Sugar — 1 tbsp (sweetness)
- Salt — 1 pinch (balance)
- Neutral oil or butter — for the pan (cooking)
- Cherry jam or smetana — for serving (accompaniment)
Method
- If the cottage cheese is wet, drain it in a cloth to remove as much water as possible (key to good structure).
- Mix the tvorog, egg, sugar, salt, and flour until a soft, slightly sticky dough forms.
- Flour your hands, form thick patties about 2 cm thick, and lightly roll them in flour.
- Cook over medium heat in a little fat, 2-3 minutes per side, until a nice golden crust forms.
- Serve warm with cherry jam, smetana, or a drizzle of honey.
How it was made : Tvorog was made at home by letting raw milk curdle and then draining it; it provided protein year-round. Syrniki (from syr, "cheese") were a way to use slightly aged tvorog. They were browned in fat in a pan on the stove.
The contemporary twist : Champion-style protein pancakes: 0% tvorog, a spoonful of semolina instead of flour, spray-oil cooking, and sugar-free berry coulis.
