On Sundays, at home, it was syrniki — and I admit, I cheated a little on the diet! You mash the tvorog, add an egg, a touch of flour, just enough, and form little golden patties in the pan. My mother would put a drop of cherry jam on top. It's full of protein, so my coaches couldn't complain too much. Warm, with a spoonful of smetana — for me, that's the taste of happiness.

  • Floura few spoonfuls (structure)
  • Sugara little (sweetness)
  • Salta pinch (balance)
  • Butter for the pana knob (cooking)
How it was made : Tvorog was made at home by letting raw milk curdle and then draining it; it provided protein year-round. Syrniki (from syr, "cheese") were a way to use slightly aged tvorog. They were browned in fat in a pan on the stove.
