- Warm water — 250 ml (hydration)
- Dry yeast — 5 g (light leavening)
- Caraway seeds — 2 tsp (signature aroma)
- Salt — 1 tsp (seasoning)
Method
- Mix flours, yeast, salt, and caraway; add water; knead into a firm dough. Let rest 30 minutes.
- Divide into balls and roll out very thin into disks or rectangles.
- Prick the entire surface with a fork (or make a central hole) for even drying.
- Bake at 230°C for 12–15 minutes until dry and crispy.
- Cool completely on a rack; store away from moisture.
- Serve broken, spread with butter and cheese.
How it was made : Knäckebröd is one of Sweden's oldest breads: a flat rye bread dried until hard, it could be stored for months hung from a pole by its central hole. This preservation technique was vital in a climate with long winters, long before refrigeration. Caraway, cultivated in Scandinavia, is its traditional aroma.
The contemporary twist : Break into irregular shards like 'artisan crackers' and serve as an appetizer with a Swedish cheese (Västerbotten) — knäckebröd reinvented as a board.
