Date, Fig, and Sesame Cakes for the Altar of Tanit
Why this dish? Queen and founder priestess, Dido honored the gods of Tyre and the great Tanit of Carthage. Sweet fruits — dates, figs, honey — and sesame were the natural gifts of the African land offered on the altars, before she herself mounted the pyre.
Small soft balls of dates and figs kneaded with sesame and honey, rolled in toasted seeds. Sweet and fragrant, inspired by the offerings placed on Punic altars.
Before touching the meal, we do not forget those above. With my own hands, I knead the date and the fig, I bind them with honey and roll them in golden sesame, then I place them on the stone of the altar for Tanit, mother of my city. What nourishes the gods brings us closer to them, stranger — and she who left Tyre in nights and tears knows that no table stands without their favor.

Ingredients (period version)
- Pitted dates — a handful (sweet base)
- Dried figs — a few (softness)
- Sesame seeds — for rolling (signature and crunch)
- Honey — a drizzle (binder and shine)
- Pounded almonds — a small handful (texture)
Ingredients
- Medjool dates, pitted — 200 g (sweet base)
- Dried figs — 100 g (softness)
- Sesame seeds — 60 g (signature)
- Honey — 1 tbsp (binder)
- Blanched almonds — 50 g (texture)
- Orange blossom water (optional) — a few drops (aroma)
Method
- Toast the sesame seeds in a dry pan until golden and fragrant; set aside.
- Roughly chop almonds, dates, and figs, then blend or pound with honey (and orange blossom water) until a soft paste forms.
- Shape into small walnut-sized balls.
- Roll them in the toasted sesame seeds, pressing so they stick.
- Chill for 30 minutes to firm up before presenting on an earthenware plate.
How it was made : Dates, figs, almonds, honey, and sesame are central to Punic cuisine and its offerings. Cakes and fruits were placed on altars during sacrifices to Tanit and Baal Hammon; these "inspired by" sweets evoke devotion without reproducing a sacred rite.
The contemporary twist : Dip some balls halfway in black sesame for a graphic contrast, and arrange them on a flat stone like a small gourmet altar.
