Why this dish? On March 26, 2012, Cameron descended alone to nearly 11,000 m in the Mariana Trench aboard the Deepsea Challenger, confined for hours in a tiny sphere. For such extreme dives, a dense, no-cook, non-messy snack is needed — and, true to his convictions, entirely plant-based.

- Pitted dates — a good handful (sweet binder)
- Rolled oats — as needed (energy base)
- Seeds (sunflower, pumpkin, flax) — to taste (crunch, energy)

- Pitted Medjool dates — 200 g (sweet binder)
- Rolled oats — 150 g (base)
- Sunflower and pumpkin seeds — 80 g (crunch and energy)
- Ground flax seeds — 2 tbsp (omega-3, binder)
- Almond butter — 3 tbsp (fatty binder)
- Pinch of salt — 1 (balance)
Method
- Blend the dates into a thick paste (add a spoonful of water if needed).
- In a bowl, mix oats, seeds, flax, and salt.
- Add the date paste and almond butter, knead firmly by hand until a homogeneous, sticky mass forms.
- Press very firmly into a parchment-lined mold, smoothing the top.
- Refrigerate for at least 1 hour to set.
- Cut into compact bars; keep cool or wrap individually for transport.
How it was made : Modern expedition rations (mountaineering, diving, space) have long favored calorie-dense foods that are stable without refrigeration and easy to eat one-handed. Dates, a concentrated sugar naturally preserved by drying, have been an endurance snack since antiquity in desert regions.
The contemporary twist : Cut them into dark blue rectangles by coating with a spirulina glaze — the color of the deep sea.
