Come, child of the dry lands, and do not fear the water. I am Lasirèn, and this white you see trembling in the dish is the color of my foam and my mirror. Set it on my table without rushing: the coconut milk must set on its own, gently, as the sea calms at dusk. A drop of lime, no more — I do not like my sweetness covered. Ingredients
  • Fresh coconut milk (pressed grated coconut)the milk of 2 coconuts (white base, signature)
  • Cane sugara good handful (sweetness)
  • Fish gelatin / isinglassenough to set (binding agent that sets)
  • Lime zesta little (fresh fragrance)
  • Orange flower watera few drops (floral offering note)
How it was made : Before industrial gelatin, these creams were set with fish glue (isinglass) or arrowroot, and coconut milk was extracted by hand, pressing grated pulp in warm water. White trembling desserts, inherited from Creole cuisines, lent themselves to offerings for water spirits.
