- Fresh coconut milk (pressed grated coconut) — the milk of 2 coconuts (white base, signature)
- Cane sugar — a good handful (sweetness)
- Fish gelatin / isinglass — enough to set (binding agent that sets)
- Lime zest — a little (fresh fragrance)
- Orange flower water — a few drops (floral offering note)
Ingredients
- Coconut milk (canned) — 400 ml (white base)
- Whole milk — 150 ml (softness)
- Sugar — 60 g (sweetness)
- Gelatin sheets — 3 sheets (6 g) (setting)
- Lime zest — 1 lime (freshness)
- Orange flower water — 1/2 tsp (fragrance)
Method
- Soften the gelatin in cold water.
- Gently heat the coconut milk, milk, and sugar without boiling, until the sugar dissolves.
- Off the heat, add the squeezed gelatin, lime zest, and orange flower water; stir until dissolved.
- Pour into small molds (domes or bowls).
- Refrigerate at least 4 hours until fully set, then unmold onto a light plate.
How it was made : Before industrial gelatin, these creams were set with fish glue (isinglass) or arrowroot, and coconut milk was extracted by hand, pressing grated pulp in warm water. White trembling desserts, inherited from Creole cuisines, lent themselves to offerings for water spirits.
The contemporary twist : Unmold on a mirror of blue fruit coulis (butterfly pea flower) to evoke Lasirèn's mirror and blue adornments.
